Almond Honey Cake
Serves 6-8
1 ½ cups almond flour
½ tsp black pepper
¼ tsp cardamom powder
Generous pinch salt
½ tsp almond extract
½ tsp vanilla extract
4 large eggs, separated
⅓ cup coconut sugar
1 tablespoon lemon zest
Best quality local raw honey for drizzling.
Ghee for greasing cake pan
Preheat the oven to 350 and grease a 8-inch spring-form cake pan generously with ghee and set aside.
In a large mixing bowl, combine almond flour, egg yolks, coconut sugar, spices, salt, and lemon zest, Mix well. Mixture will be quite stiff
In a separate bowl, beat the egg whites until very stiff peaks form. Fold the egg whites into the almond flour mixture until combined.
Transfer the cake mixture into the greased cake pan and bake the cake for 30 minutes, or until tender on top.
Remove the cake from the oven and let cool for 15 -20 minutes. Slice and serve with a drizzle of honey on each piece.
