Elderberry WInter Warmer
Serves 6-8
¼ cup dried elderberries
1 tsp whole cloves
1 tsp black peppercorns
3 star anise
4-5 cinnamon sticks
1 tsp fennel seeds
1-3 tsp licorice root pieces (This depends on how sweet you like your final product. May omit and use maple syrup or coconut sugar to taste if you find licorice distasteful)
In a 6 quart stock pot place all ingredients and 4 quarts of water. Bring to a boil and simmer over a low flame for 15-20 minutes. Taste as you go, adjusting the spices as you feel necessary. This will intensify the longer it cooks, so also feel free to add more water if necessary.
Strain and serve hot. This makes a wonderful pre-dinner digestive. This also keeps well in the fridge and can be reheated in the microwave or on the stovetop.
