Pumpkin Pie Steel Cut Oatmeal

It's Pumpkin Season!

And I don't drink coffee, so none of those over-sugared lattes for me. 

Today's recipe is for a lovely Pumpkin Pie Steel Cut Oatmeal.  This will satisfy your pumpkin yearnings without making you feel gross from caffeine and sugar!

Steel cut oats, pumpkin puree, and spices come together in a flash in the Instant Pot, but I've also included stovetop directions. 

Packed with flavour AND fiber, it will leave you satisfied, warm, and cozy!

Pumpkin Pie Steel Cut Oats

(For Instant Pot or Stovetop)

Serves 4-6

¼ cup sesame oil

1 cup steel cut oats (regular old-fashioned, not instant cook)

1 tsp cinnamon

½ tsp turmeric

¼ tsp black pepper

¼ tsp clove

¼ tsp nutmeg

¼ tsp ground ginger

½ tsp salt

1 cup pumpkin puree

1 cup almond milk

½-¾ cup water

2 tsp vanilla

Set Instant Pot to sauté on the medium or normal setting. Add oil and oats and stir to combine.  As the pot starts to heat up, add your spices and salt. Stir to combine. Pay attention to your oats as you prepare the wet ingredients, giving them an occasional stir. Then, in a 4 cup measuring cup, put your pumpkin puree and almond milk and stir to combine.  Add water until you have ~ 2 ¾ cup total wet ingredients. Add the vanilla and stir well.  

Turn off the pressure cooker and add all the wet ingredients, stirring to combine and to get up any stuck bits off the bottom.  Put the cover on, make sure the sealing vent is sealed, and set to pressure cook at normal high pressure for 4 minutes.  Now go attend to what needs attending as your delicious breakfast takes care of itself!  

Wait for the pressure to naturally release.  Once that has happened, remove the lid and give everything a good stir.  This may seem watery upon first opening the pot, but after stirring it should come together.  If not, turn sauté function to low and simmer, stirring frequently, until to desired consistency.

Stove Top Method: Sautee oats and spices as above, add all wet ingredients (increase water to 1 cup) as above, stir well, and bring to a boil over medium high heat.  Reduce to simmer and cook, stirring frequently, for about 30-45 minutes, or until oats are cooked and it is your desired consistency. Also, order an Instant Pot if you have the space for one. They make life easier.

NOTE: You can absolutely use your favourite pumpkin pie spice blend instead of the separate spices.
