Spiced Pear (or Apple) Muffins
These muffins are perfect for when you want a treat, but you want it to be healthy and taste decadent. These also travel well and are best reheated in the toaster oven or griddleD on a hot cast iron pan.
Spiced Pear (or Apple) Muffins
Makes 10-12
2 medium sized pears or apple (2 cups diced, divided)
2 eggs
⅓ cup coconut sugar
2 tbsp ghee (melted + cooled)
1 tsp vanilla extract
1 tbsp cinnamon
¼ tsp cloves
¼ tsp nutmeg
¼ tsp black pepper
¼ tsp dried ginger
½ tsp baking soda
2 cups almond flour
½ tsp apple cider vinegar
¼ tsp sea salt
Preheat the oven to 350 and line a 12 muffin tin with paper cups or grease your tin with ghee. Dice the pears fairly small (I only tend to peel my fruit if the skin is very tough) Reserve 1 cup of diced pears. Add all ingredients to the bowl of a food processor (except for the 1 cup of reserved pears). Blend until fully combined, scraping sides of processor as necessary.
Scrape batter into a medium bowl and fold in the reserved pears. Scoop about ¼ cup of batter for each muffin. (I really like a muffin scoop for this, sort of like an ice cream scoop, but for batter.) You can absolutely sprinkle these with additional cinnamon and coconut sugar if desired.
Bake for 30-32 minutes or until a tester inserted into the center of a muffin comes out clean. Allow to cool in muffin tin for 5 minutes, then remove to a cooling rack to cool completely.
