Strawberry Compote
Makes 2 cups
1 quart strawberries (This works well with very ripe berries, even if they are just starting to go over)
1-3 tsp coconut sugar (depends on your taste and the sweetness of the berries)
1 tsp coriander powder
½ tsp black pepper
¼-½ tsp salt
De-stem and chop the berries into bite sized pieces. Add chopped berries and the rest of the ingredients into a saucepan and heat over medium high heat, stirring well. Cover and allow to come to a boil, then reduce heat to low, uncovered, and cook until the mixture starts to get ‘jammy’. Taste and adjust sweetness/saltiness as necessary. It’s ready when you cannot stop eating it. You can enjoy this warm or transfer to a jar to keep in the fridge.
