Sweet Potatoes

Sweet Potato and Sage Breakfast Hash

Serves 4-6

3 tbsp ghee

1 tbsp dried sage leaves, crushed

1 tsp coriander seeds, crushed

1 tsp dried rosemary, crushed

½ tsp dried thyme, crushed

½ tsp black pepper

1 onion, finely chopped

1 tsp salt and more to taste

1 lb ground turkey

2 large sweet potatoes, diced small

1 green pepper, chopped

Melt the ghee in a large skillet over medium heat. Add the spices (except the salt) and cook until fragrant, about one minute. Add the onion and 1 tsp salt and cook until the onion just begins to sweat, then add the ground turkey and cook, breaking the turkey apart with a spoon or spatula so there are no big clumps left.

When the turkey just begins to brown, add the sweet potatoes and green pepper. Stir well, cover, and allow to cook until the sweet potatoes are tender and the turkey is cooked through. If there is excessive liquid in the pan, cook for a few moments uncovered or until the liquid evaporates. I like to cook this until things begin to caramelize a bit, but everyone has their own preferences.

Taste for seasoning and serve hot. This is good with a fried egg and a nice piece of sourdough.
