Creamy Spiced Butternut Squash Soup

Ingredients:
1 tbsp ghee
1 small onion, diced
2 cloves garlic, minced
1-inch piece fresh ginger, grated
1 tsp cinnamon
1/2 tsp cumin
1/4 tsp black pepper
1 medium butternut squash, peeled & cubed
4 cups bone or vegetable broth
1/2 cup coconut milk (the type from a can)
1/2 tsp of salt, and to taste
Instructions:
Heat ghee in a pot over medium heat. Add onion, garlic, ginger, and the 1/2 tsp salt; sauté until fragrant.
Stir in cinnamon, cumin, and black pepper.
Add the squash and broth, bringing to a simmer. Cook until squash is tender.
Blend until smooth, stir in coconut milk, and season with salt.
Serve warm with a sprinkle of black pepper and a drizzle of ghee.
