Fall Herbal Chai

Serves 2-4

12 cardamom pods crushed 
1 tbsp cinnamon chips or 1-2 cinnamon sticks smashed into chunks
2-3 clove buds crushed slightly
1 tsp fennel seeds left whole
½ -1 tsp dried ground ginger powder (depending on how spicy you want your chai)
½ tsp black pepper ground or 4-6 black peppercorns
¼ tsp cumin seeds left whole
¼ tsp ground licorice powder (can omit, some people have an aversion to licorice)
2 cups milk of choice (whole fat, unhomogenized, raw cow’s milk from a cow you know is best)
OPTIONAL: 3-6 tsp of raw sugar or to taste (If you can find Jaggery, that is the best in fall and winter)

Add spices to a heavy bottomed 3 quart pot and add 4 cups of water.  Bring to a boil and let simmer until reduced by half. 

Add milk and sugar (if using) to taste.Reduce heat to the lowest possible setting and let steep for 5 minutes.  Strain and serve.  

This is not a hard and fast recipe, feel free to play around with the amounts to see what your preferences are.
