Ginger Molasses Oatmeal Cookies
Makes 9-10 cookies

Ingredients:

  • ¼ cup melted and cooled ghee (coconut oil also works)

  • ¼ cup coconut sugar or allulose or maple sugar

  • 2 tbsp molasses

  • 1 egg, at room temperature

  • 1 ½ tsp vanilla extract

  • 1 ½ cups almond flour

  • ¼ cup quick cook or old-fashioned rolled oats

  • ½ tsp baking soda

  • ¾ tsp ground ginger

  • ½ tsp cinnamon

  • ½ tsp allspice

  • ¼ - ½ tsp black pepper

  • ¼ tsp salt

  • Organic sugar for rolling (if desired)

Instructions:

  1. Preheat oven to 350°F.

  2. In a large bowl, mix together melted and cooled ghee, coconut sugar, molasses, egg, and vanilla extract.

  3. Add in almond flour, oats, baking soda, spices, and salt. Mix well to form a dough, letting it rest for a few minutes.

  4. Scoop dough and roll into balls. Roll in organic cane sugar, then place on an ungreased baking sheet.

  5. Gently flatten the dough with your hand or the back of a glass.

  6. Bake for 8-11 minutes. Let cool on the cookie sheet for 10 minutes before transferring to a wire rack.
