Lemon Honey Almond Oatmeal Bites

Makes 20-25 bites

⅔ cup almond butter (I like to use crunchy, salted here)

1 cup old fashioned oats

⅓ cup honey

¼ tsp freshly ground black pepper

Zest of one lemon

Juice of one lemon

2  tbsp chia seeds (optional)

Make sure to zest your lemon before cutting it. Mix all the ingredients well, cover and let set in the fridge for 30 minutes to an hour. Roll into tablespoon sized balls and let sit in the fridge for another hour or so to firm up. I am actually not sure how many balls this will make as we kept eating it as we made it. You could absolutely sub out the almond butter for peanut if you like.
