Oven Roasted Cabbage with Garlic and Mustard Seeds
Serves 4-6
1 medium head of green cabbage, chopped into bite sized pieces, core removed
1 whole head of garlic, cloves separated, peeled, and stem ends removed
3-4 tbsp sesame oil
2-3 tsp black mustard seeds
Salt and pepper to taste
Preheat oven to 400. Prepare a large baking sheet (or 2 standard baking sheets) with parchment paper. You want enough space for the cabbage to fit with a little breathing room. The cabbage will cook down, but you don’t want overly crowded pans.
Place chopped cabbage and garlic in a bowl big enough to hold it all with room to stir. Drizzle with sesame oil and add the mustard seeds, salt and pepper. Using a rubber spatula, stir well ensuring an even coating of oil and spices. Taste the spatula for seasoning and adjust as necessary.
Roast for 45 - 60 minutes, stirring at the 20 minute mark, and then every 10-15 minutes until the cabbage is getting golden and delicious. You know it is done when you can’t stop eating it straight off the sheet pan. Some caramelized, slightly burnt bits are fine. This gives wonderful flavour to the dish.
This is excellent as a side dish to roast chicken, and tastes amazing with a little drizzle of balsamic vinegar.
