Roasted Apple Date Sauce

Serves 4-6

6 apples good for baking (I used McIntosh)

½-1 tsp pumpkin pie spice

2-3 seedless dates (depending on how tart your apples are)

Preheat the oven to 350 degrees.

Slice the apples in half and use a sharp spoon to carve out the cores and stems. Arrange apple halves, sliced side down, in a 9x13 baking dish. Non-stick is best. Pour water into the pan until it is just about 1/8th of an inch up the apples. Sprinkle the apples with pumpkin pie spice.

Bake for 20-25 minutes or until the apples are very soft. Take the apples out of the oven and throw the dates into the pan, making sure they are in the liquid in the bottom. Allow everything to cool enough that you can handle the pan without oven mitts.

Pour the contents of the pan into a blender or food processor, making sure to include all the liquid and bits, scraping them out with a spatula.

Puree until smooth and enjoy.

This will keep in the fridge for 3-4 days if it lasts that long and is delicious stirred into hot oatmeal.
