Spiced Beef & Squash Mash

Ingredients (Serves 4-6)

For the Spiced Beef:

  • 1 lb ground beef (grass-fed, if possible. You could also use lamb or even chicken or turkey)

  • 1 small sweet onion, finely chopped

  • 2 cloves garlic, minced

  • 1-inch piece of ginger, grated

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • ½ tsp ground cinnamon

  • ½ tsp turmeric powder

  • ½ tsp smoked paprika (optional, for depth)

  • 1 tsp sea salt (or to taste)

  • 1 tbsp ghee or coconut oil

  • Fresh cilantro or parsley for garnish (optional)

For the Squash Mash:

  • 2 medium-sized winter squash (butternut, kabocha, or acorn), peeled, seeded, and cubed

  • 2 tbsp ghee or coconut oil

  • 1 tsp ground cinnamon

  • ½ tsp nutmeg

  • Sea salt to taste

Instructions:

1. Roast the Squash:

  • Preheat your oven to 400°F (200°C).

  • Toss the squash cubes with ghee, cinnamon, nutmeg, and sea salt.

  • Spread evenly on a baking sheet and roast for 25-30 minutes until soft and caramelized. Stir halfway through.

2. Cook the Spiced Beef:
